Cajeta, a traditional Mexican sweet, is more than just a treat; it’s a piece of history and culture in every bite. Originating from Veracruz, this delight has charmed generations with its unique flavor and distinct texture.
Cajeta has its roots in the town of Cajeta, Veracruz. It is believed that the nuns from the local convent were the pioneers in perfecting this recipe, using goat's milk, sugar, and spices to create a sweet treat that quickly became a regional tradition. Since then, cajeta has been a symbol of Mexico's rich culinary heritage, celebrated during festivities and enjoyed throughout the year.
Cajeta is made by slowly cooking goat's milk, though cow's milk can also be used. Sugar and baking soda are added to this dairy base, which are crucial for achieving its characteristic texture and color. The mixture is simmered over low heat for several hours, while being constantly stirred to prevent burning and to ensure a smooth texture.
After a good while, the milk reduces and thickens, transforming into the caramelized and smooth sweet known as cajeta. This process requires patience and attention, as cajeta must reach the perfect consistency before being jarred and enjoyed.
Cajeta is not only delicious on its own; it is also used in a variety of desserts and dishes. In Mexico, it is commonly found as a filling in cakes, crepes, ice creams, and even popsicles.
One of the most curious things in Mexico is that you can also find burnt cajeta. I have no idea how it happened, but from an accident of burning the cajeta, a dessert emerged that might even be more delicious than the original. There are also variations with liquor, known as "envinadas," which, in my opinion, are delightful.
So the next time you enjoy a piece of cajeta, remember that you're savoring a sweet with a rich tradition and a history full of flavor. And a small recommendation: as I always say, if you have the chance to try something, look for artisanal products rather than big-name brands; something handmade will always offer a pleasant surprise.
