Mole is one of the most emblematic dishes of Mexican gastronomy, known for its complexity and rich amalgamation of flavors. Its origin dates back to pre-Hispanic times, but it has evolved significantly over time, incorporating ingredients and techniques from Spanish cuisine. The word "mole" comes from the Nahuatl "molli", which means "sauce". Today, the term is associated with some specific preparations that vary by region.

Mexico has a wide diversity of moles, each with its unique flavor, color and texture. However, some of the most popular varieties can be highlighted among them:


  1. Mole Poblano : Originally from Puebla, it is perhaps the most internationally recognized mole. It is made with a mixture of dried chiles, chocolate, spices, and more than 20 ingredients. Its characteristic sweet and spicy flavor makes it a perfect accompaniment to chicken or turkey, especially during important celebrations.

  2. Mole Negro : Coming from the state of Oaxaca, it is one of the most complex and dark moles due to the combination of black chiles, chocolate, and other ingredients such as banana and spices.   3. Mole Verde : This mole is distinguished by its vibrant green color, which comes from fresh ingredients such as tomatillos, cilantro, epazote, and pumpkin seeds. It is lighter and fresher compared to other moles, and is usually served with chicken or pork.

  4. Yellow Mole : Another mole originating from Oaxaca, it is characterized by its yellow color obtained from yellow chili peppers and corn dough. It has a milder flavor and is less sweet than other moles, often used in stews with beef and vegetables.

  5. Mole de Olla : Unlike thicker moles, this one comes in the form of a broth. It is a traditional dish from various regions and is served with beef, corn, and vegetables, making it a comforting and nutritious meal.

Mole is not only a delicious dish, but also a manifestation of Mexico's cultural richness. Its preparation, which can take several hours or even days, is a meticulous process that reflects the importance of patience and dedication in Mexican cuisine.
